Mighty Greens #raw #green #juice #recipe

When I was feeling sluggish around 5.5 months pregnant, I knew that my iron was probably low. It's around 20 weeks when your doctor will suggest an iron supplement, and since we hadn't gotten to that appointment just yet (it was on my list to ask) I wanted to come up with a juice recipe that would be iron rich, and delicious.

3 cups baby spinach
1 apple (cored)
1 tangerine (peeled)
3 cups baby carrots

Yes, friends...that's 9 servings of fruits and vegetables in one glass. Start with one bunch of baby spinach, followed by half an apple and half your tangerine. Then, another round of spinach, apple, tangerine and finish with all of your carrots.

The harder fruits and vegetables like carrots and apples will help push soft things like baby spinach and the tangerine flesh through the juicer to make sure you are getting the most amount of juice out of your produce.

So, this juice is packed with iron from the baby spinach, but what else are you getting? Fiber, beta carotene, vitamin C, vitamin A and potassium...just to name a few!

Enjoy!
