No Bake Chocolate Haystacks #Recipe

Your cookie recipe for the month of March is one of my absolute favourite recipes from when I was growing up. There's just something about a sugary, chocolatey haystack that puts a smile on your face.


And if you're in need of a quick chocolate fix, they only take about 20 minutes to set in the fridge, then are perfect for nibbling on!

Ingredients

2 cups sugar
1/2 cup skim milk
1/2 cup butter
1/2 cup cocoa (or a tbsp more if you like!)
1/2 tsp vanilla
3 cups of quick oats
1 cup flaked coconut (I opted for unsweetened since there is already enough sweet in the recipe)

In a medium saucepan, combine sugar, milk, butter, cocoa and vanilla. Heat to a boil stirring constantly to ensure that you don't burn your chocolate!

Once at a boil, reduce heat and cook for 5 minutes, stirring constantly. Your arms definitely get a work out with this one!

Remove from heat and stir in the oats and coconut. Work quickly to get everything covered, and then drop onto a cookie sheet (covered first with wax paper) by the spoonful. You can make these as big or as small as you would like.

Pop into the fridge to set, which doesn't take very long, then put into a sealed container. Keep in the fridge!

How-To Tuesday: Chocolate Cake in a Cup

I saw this tweet the other day and just knew that I had to try it!

Seriously? Chocolate cake in 5 minutes? This cant be true!!

Or can it?

I set out last night to discover if it was...and not only is it, but you can have delicious chocolate cake in 3 minutes!!

How-To Tuesday and Whimsical Wednesday: Chocolate Skor Cake

My apologies for a two-in-one post, highly unlike me! However, I've come down with a head cold, likely due to burning the candle at all ends!

Thankfully, today's post is absolutely DELISH!


Chocolate Skor Cake

Use your favourite chocolate cake recipe (boxed or scratch) for this. It will taste amazing no matter what recipe you use as long as it's your favourite!

Once cake is completely cooled (I like to cool the cake, then wrap in plastic wrap and further cool overnight in the fridge), place one cake on your chosen cake plate.

Fill will chocolate buttercream.

Option #1: top buttercream with crushed Skor bars



Place second cake layer on top, frosting then entire cake with chocolate buttercream.

Option #2: top outer edge of cake with crushed Skor bars



Wipe the edges of your cake plate clean, and serve with a smile!

I did say this was delish, right??

Some fun facts about chocolate:

- chocolate contains antioxidants that help prevent cancer and heart disease

- The Swiss eat the most chocolate every year...nearly 19lbs per person!

- the first chocolate bar was produced in 1842 by Cadbury...now makers of the ever delicious Mini Eggs and Creme Eggs!
