Peanut Butter Strawberry Jam Oatmeal Muffins with Cream Cheese Frosting #recipe #baking

Yesterday, I got in the kitchen and whipped up a couple varieties of muffins for our girls race weekend away (recapping next week!), and these ones were so delicious, I just had to share them with you asap!


Preheat oven to 400F

Combine in a bowl

1 3/4 cup flour
1/2 cup oats
1/3 cup sugar
2 tsp baking powder

Add in

1 egg
3/4 cup milk
1/4 cup oil

Fold in 
2 tbsp peanut butter

Once everything is combined, fill your lined muffin tin 2/3 full and then put 1 tsp strawberry jam on top of each muffin, folding the muffin batter over it slightly.


Bake for 18 minutes, then set to cool completely.

The next step is optional, but highly recommended. Cream. Cheese. Frosting.


1 8oz. brick of cream cheese (softened)
1/4 cup butter (softened)
3 cups icing sugar (or confectioners sugar...but here in Canada, it's icing sugar)

Blend the cream cheese and butter together, then add the icing sugar one cup at a time. Top your muffins with a dollop of the cream cheese frosting, and enjoy!

Optional: add a dash of vanilla to the frosting to make it extra sweet (but this recipe really doesn't need that!)
