How-To Tuesday: Luscious Lemon Cupcakes

How's your sweet tooth doing today?

This past weekend, I played host to my best friend, her fiance, their son and her mom for her cake tasting, and I thought I'd share one of the recipes with you!

Luscious Lemon Cupcakes with Vanilla Buttercream

Preheat oven to 350F

1 1/3
cups
flour

1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 cup butter, softened
2/3 cup sugar
2 large eggs, lightly beaten
1 tablespoon ground lemon zest
Juice from 1 freshly squeezed lemon

Divide into lined muffin pan and bake for 18 minutes, checking for doneness with a toothpick when the timer goes off.

Frost with your favourite vanilla or almond buttercream recipe!



Enjoy! The cake is very delicate and soft, so handle with care and eat immediately!
